Chili & Lime Buffalo Mozzarella wraps with Spinach and Sun-Blushed Tomatoes

Ingredients
2 Discovery Spinach Wraps
1 tsp olive oil
1/4 tsp Pasta Basilico
2 tbsp chopped sun-blushed tomatoes
generous handful baby spinach
2 vine ripened tomatoes, sliced
200g buffalo mozzarella, cut into chunks
ΒΌ tsp Chili & Lime
2 tbsp toasted flaked almonds
  1. Brush the wraps with half the oil and sprinkle on the Pasta Basilico and the chopped sun-blushed tomatoes.
  2. Lay the spinach in the centre of the Wrap and place the sliced tomatoes and mozzarella on, then sprinkle with the Chili & Lime.
  3. Sprinkle on the almonds and wrap tightly then brush all over with the remaining oil.
  4. Griddle until crisp and the mozzarella just beginning to melt.
