2 Discovery Spinach wraps
3 tbsp chunky peanut butter
1/4 tsp Orange Pepper
1 corn-fed chicken breast, roasted or grilled, thinly sliced
1 red pepper, grilled, peeled and thickly julienned
small handful of coriander on the stem, torn apart
1 medium avocado
1/2 tsp Chili & Lime
1 spring onion, thinly sliced
1/2 tsp lime or lemon juice
- Spread the peanut butter over one side of the wraps, leaving a 2cm border.
- Toss the Orange Pepper with the sliced chicken breast, grilled pepper and coriander and lay on the Wrap towards the centre.
- Mash the avocado with the Chili & Lime, spring onion and lime juice and dollop this on the chicken then wrap it firmly up.
- Dry griddle till coloured.
