Slow cooked cacao & chocolate venison wrap with soured cream

Well worth the wait. The slow cooked venison is complemented by the spicy richness of the Cacao & Chilli, add the seasoning right at the end for maximum flavour

Ingredients
10 Discovery Plain Flour Tortillas 10"
10g Santa Maria Cacao & Chili
200g diced haunch of venison
400g onions, sliced (unpeeled weight)
5 garlic cloves
100g bacon lardons
500g button mushrooms
2ml veal or beef stock, concentrate
200ml water
500g cooked rice
200g Santa Maria Soured Cream

Method
  1. Slow cook the venison with the onions, garlic, mushrooms, lardons & stock until tender and the stock has reduced. Refrigerate.
  2. Place the filling and rice onto the wrap and sprinkle over the Cacao & Chili seasoning.
  3. Fold and place onto the contact grill.
  4. Serve with Soured Cream.
